**Ingredients: **

- 4 large russet potatoes

- 1 lb ground beef

- Salt and pepper to taste

- 1 cup shredded cheddar cheese

- 1/4 cup chopped fresh cilantro

- 2 tbsp olive oil

**Instructions: **

1. Preheat the oven to 400°F (200°C).

2. Scrub the potatoes clean and pierce each potato a few times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until they are fork-tender.

3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

4. Add the minced garlic to the skillet and cook for another minute until fragrant.

5. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.

6. Season the beef mixture with cumin, chili powder, paprika, salt, and pepper. Stir well to combine and let it cook for another 2-3 minutes.

7. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skins.

8. Mix the scooped-out potato flesh with the cooked beef mixture in a bowl. Adjust seasoning if needed.

9. Fill each potato skin with the beef and potato mixture, then top with shredded cheddar cheese.

10. Place the filled potato skins back on the baking sheet and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

11. Remove from the oven and sprinkle with chopped fresh cilantro before serving.
