Vietnamese Summer Rolls with Prawns and Peanut Sauce

**Recipe Title: ** Vietnamese Summer Rolls with Prawns and Peanut Sauce

**Brief Description: ** These Vietnamese summer rolls are fresh, vibrant, and packed with flavors. The succulent prawns and creamy peanut sauce make them a delightful dish for a light summer meal.

**Servings: ** 3-4 people

**Prep Time: ** 1 hour

**Cook Time: ** 30 minutes

**Ingredients: **

For the Summer Rolls:

- 12 large prawns, peeled and deveined

- 8 rice paper wrappers

- 1 cup vermicelli noodles, cooked according to package instructions

- 1 carrot, julienned

- 1 cucumber, julienned

- 1 red bell pepper, thinly sliced

- 1/4 cup fresh mint leaves

- 1/4 cup fresh cilantro leaves

- 1/4 cup fresh basil leaves

For the Peanut Sauce:

- 1/2 cup creamy peanut butter

- 2 tablespoons soy sauce

- 1 tablespoon rice vinegar

- 1 tablespoon honey

- 1 clove garlic, minced

- 1/2 teaspoon grated fresh ginger

- 1/4 cup water

- Crushed peanuts for garnish

**Instructions: **

1. **Prepare the Prawns: ** Heat a grill pan over medium heat. Season the prawns with salt and pepper. Grill the prawns for 2-3 minutes on each side until they are cooked through. Set aside to cool.

2. **Prepare the Peanut Sauce: ** In a small saucepan, combine peanut butter, soy sauce, rice vinegar, honey, garlic, ginger, and water. Cook over low heat, stirring continuously until the sauce is smooth and well combined. Remove from heat and let it cool.

3. **Prepare the Ingredients: ** Prepare all the vegetables by slicing and julienning them. Cook the vermicelli noodles according to package instructions. Set aside all the prepared ingredients in separate bowls for easy assembly.

4. **Assemble the Summer Rolls: ** Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place the wrapper on a clean, damp kitchen towel. Add a few prawns, vermicelli noodles, vegetables, and herbs in the center of the wrapper.

5. **Roll the Summer Rolls: ** Fold the sides of the wrapper over the filling, then roll it tightly to enclose the filling. Repeat with the remaining wrappers and filling.

6. **Serve: ** Slice the summer rolls in half diagonally and arrange them on a serving platter. Garnish with crushed peanuts and serve with the peanut sauce for dipping.

**Special Tips and Variations: **

- You can add sliced avocado or mango for a tropical twist to the summer rolls.

- Feel free to customize the filling with your favorite vegetables and herbs.

- To make the rolls vegan, substitute the prawns with tofu or tempeh.

- You can make the summer rolls ahead of time and store them in the refrigerator, wrapped in damp paper towels to keep them fresh.
