- 1 whole turkey (12-14 lbs), thawed if frozen

- 1/2 cup unsalted butter, softened

- 4 cloves garlic, minced

- 2 tablespoons fresh rosemary, chopped

- 2 tablespoons fresh thyme, chopped

- 2 tablespoons fresh sage, chopped

- Salt and pepper to taste

- 1 lemon, halved

- 1 onion, quartered

- 2-3 cups chicken or turkey broth

6. Instructions:

1. Preheat your oven to 325°F (160°C).

2. Remove the turkey from the packaging and pat dry with paper towels. Let it sit at room temperature for about 30 minutes.

3. In a small bowl, mix the softened butter, minced garlic, chopped rosemary, thyme, sage, salt, and pepper to form an herb butter.

4. Gently separate the turkey skin from the breast and legs using your fingers, being careful not to tear the skin.

5. Rub half of the herb butter mixture under the skin of the turkey, spreading it evenly.

6. Rub the remaining herb butter over the outside of the turkey.

7. Squeeze the lemon halves over the turkey and place them inside the cavity along with the quartered onion.

8. Truss the turkey legs with kitchen twine and tuck the wing tips under the body.

9. Place the turkey on a rack in a roasting pan breast side up.

10. Pour the broth into the bottom of the roasting pan.

11. Cover the turkey loosely with foil and roast for about 2.5-3 hours.

12. Remove the foil, baste the turkey with pan juices, and continue roasting for another 1-1.5 hours or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).

13. Once the turkey is done, transfer it to a cutting board, tent it loosely with foil, and let it rest for 20-30 minutes before carving.

7. Special Tips:

- For a golden crispy skin, you can remove the foil during the last 30 minutes of roasting.

- Feel free to customize the herb blend to your preference or add citrus fruits like oranges for extra flavor.

- Save the pan drippings to make a delicious gravy to accompany the turkey.
