Ingredients:

- 20 large mushrooms, stems removed and reserved

- 1/2 lb dungeness crab meat, cooked

- 1/2 lb shrimp, peeled and deveined

- 1/2 lb prawns, peeled and deveined

- 1/2 cup breadcrumbs

- 1/2 cup grated Parmesan cheese

- 1/4 cup chopped parsley

- 2 cloves garlic, minced

- 1/4 cup olive oil

- Salt and pepper to taste

Instructions:

1. Preheat the oven to 375°F (190°C) and grease a baking dish.

2. Finely chop the mushroom stems and set aside.

3. In a pan, heat olive oil over medium heat. Add the chopped mushroom stems, garlic, shrimp, and prawns. Cook until shrimp and prawns are pink and cooked through, about 5-7 minutes.

4. Remove the pan from heat and transfer the shrimp and prawn mixture to a large mixing bowl.

5. Add the crab meat, breadcrumbs, Parmesan cheese, parsley, salt, and pepper to the mixing bowl. Mix well to combine.

6. Take each mushroom cap and fill it generously with the seafood stuffing mixture. Place the stuffed mushrooms in the greased baking dish.

7. Drizzle a little olive oil over the stuffed mushrooms and bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

8. Serve the seafood stuffed mushrooms hot, garnished with extra parsley if desired.

Special Tips or Variations:

- You can add a squeeze of lemon juice to the seafood stuffing mixture for a burst of freshness.

- Feel free to add some feta cheese or olives to the stuffing mixture for a Greek twist.
