Brief Description: This gluten-free, low-fat, high-protein Pumpkin Banana Bread is a delicious and nutritious dessert perfect for any occasion. The pecan streusel topping adds a crunchy texture and nutty flavor to this moist and flavorful bread.

Servings: 5-6 people

Prep Time: 15 minutes

Cook Time: 45 minutes

Ingredients:

- 1 cup pumpkin puree

- 2 ripe bananas, mashed

- 1/4 cup honey

- 2 eggs

- 1/4 cup peanut butter

- 1/4 cup melted butter

- 1 tsp cinnamon

- 1 cup pecan flour

- 1/2 cup buckwheat flour

- 1 tsp baking powder

- 1/2 tsp baking soda

- 1/4 tsp salt

For the Pecan Streusel Topping:

- 1/2 cup chopped pecans

- 2 tbsp honey

- 2 tbsp pecan flour

- 1/2 tsp cinnamon

Instructions:

1. Preheat the oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.

2. In a large mixing bowl, combine the pumpkin puree, mashed bananas, honey, eggs, peanut butter, melted butter, and cinnamon. Mix until well combined.

3. In a separate bowl, whisk together the pecan flour, buckwheat flour, baking powder, baking soda, and salt.

4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

5. Pour the batter into the prepared loaf pan and spread it out evenly.

6. In a small bowl, mix together the chopped pecans, honey, pecan flour, and cinnamon to make the streusel topping.

7. Sprinkle the streusel topping over the batter in the loaf pan.

8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

9. Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Special Tips or Variations:

- You can add a handful of chocolate chips or raisins to the batter for added sweetness and texture.

- Serve the Pumpkin Banana Bread warm with a dollop of Greek yogurt or a drizzle of honey for a delicious dessert or snack.

- Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze slices for longer storage.
