4. Sprinkle the thyme, oregano, and flour over the vegetables. Stir well to combine and cook for another 2-3 minutes to cook off the raw flour taste.

5. Slowly pour in the chicken broth while stirring constantly to prevent lumps from forming. Bring the mixture to a boil, then reduce the heat to low.

6. Return the browned chicken and sausage to the pot. Cover and simmer over low heat for about 2 hours, stirring occasionally, until the chicken is tender and falling off the bone.

7. Skim off any excess fat that rises to the surface. Taste and adjust seasoning with salt, pepper, and more Cajun seasoning if desired.

8. Serve the Cajun chicken and sausage gumbo hot over cooked white rice. Garnish with chopped green onions.
