Ingredients:
Instructions:
1. In a non-stick saucepan, combine the sweetened condensed milk, icing sugar, coconut milk, shredded coconut, and salt.
2. Cook the mixture over medium heat, stirring constantly to prevent burning.
3. Continue stirring until the mixture thickens and starts to pull away from the sides of the pan. This should take about 10-12 minutes.
4. Remove the pan from heat and stir in the vanilla extract.
5. Pour the fudge mixture into a greased 8x8 inch square pan lined with parchment paper. Smooth the top with a spatula.
6. Sprinkle some additional shredded coconut on top for decoration.
7. Let the fudge cool at room temperature for about 1-2 hours, then transfer it to the refrigerator to set for at least 2 hours, or until firm.
8. Once set, remove the fudge from the pan using the parchment paper and cut it into squares.
9. Serve and enjoy the creamy and coconut-infused fudge!
