1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, and salt. Set aside.
3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the almond extract and egg to the butter-sugar mixture and mix until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. Using a cookie scoop or spoon, scoop out about 1 tablespoon of dough and flatten it in your hand.
7. Place a small amount of Biscoff spread and Nutella in the center of the flattened dough.
8. Take another tablespoon of dough, flatten it, and place it on top of the fillings. Gently press the edges together to seal the fillings inside.
9. Repeat with the remaining dough and fillings to make 6-8 cookie sandwiches.
10. In a small bowl, whisk the egg whites until frothy.
11. Dip each cookie sandwich into the egg whites, allowing any excess to drip off, then place it on the prepared baking sheet.
12. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set.
13. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
