2. In the same pan, add the remaining tablespoon of butter. Crack the eggs into the pan and cook them sunny-side up. Once cooked, remove the eggs from the pan and set aside.

3. In the same pan, add the diced onion, potato, tomato, and minced garlic. Cook until the vegetables start to soften, about 5 minutes.

4. Add the sliced chorizo sausage to the pan and cook for another 3-4 minutes until it starts to release its oils.

5. Stir in the rice and pasta, then add the paprika, cayenne pepper, salt, and pepper. Cook for a minute to toast the rice and pasta lightly.

6. Pour in 1 1/2 cups of water, lemon juice, and honey. Bring the mixture to a simmer, then reduce the heat to low. Cover the pan and let it cook for 20-25 minutes or until the rice and pasta are tender and have absorbed the liquid.

7. Return the cooked chicken to the pan and mix everything together. Sprinkle the grated cheese over the top and cover the pan for a few minutes until the cheese melts.

8. To serve, divide the paella into two plates and top each with a sunny-side-up egg. Garnish with fresh herbs or extra lemon wedges if desired.
