Ingredients:

- 1 lb flank steak, thinly sliced against the grain

- 2 tablespoons vegetable oil

- 1 red bell pepper, sliced

- 1 green bell pepper, sliced

- 1 small onion, sliced

- 3 cloves garlic, minced

- 1-inch piece of ginger, minced

- 2 green onions, chopped

- Sesame seeds for garnish (optional)

- Steamed rice, to serve

For the marinade:

- 2 tablespoons soy sauce

- 1 tablespoon Shaoxing wine or dry sherry

- 1 tablespoon cornstarch

For the Szechuan sauce:

- 3 tablespoons soy sauce

- 2 tablespoons hoisin sauce

- 1 tablespoon oyster sauce

- 1 tablespoon chili garlic sauce

- 1 teaspoon sugar

- 1/2 cup chicken or beef broth

Instructions:

1. In a bowl, combine the sliced beef with the marinade ingredients: soy sauce, Shaoxing wine, and cornstarch. Mix well and let it marinate for at least 15 minutes.

2. In another bowl, whisk together all the ingredients for the Szechuan sauce: soy sauce, hoisin sauce, oyster sauce, chili garlic sauce, sugar, and broth. Set aside.

3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef slices and stir-fry for 2-3 minutes until browned. Remove the beef from the pan and set aside.

4. In the same pan, add the remaining tablespoon of oil. Add the garlic, ginger, and white parts of the green onions. Stir-fry for 30 seconds until fragrant.

5. Add the sliced bell peppers and onion to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly softened but still crisp.

6. Return the cooked beef to the pan and pour in the prepared Szechuan sauce. Stir well to combine all the ingredients and allow the sauce to thicken slightly.

7. Cook for another 2-3 minutes until everything is heated through and coated in the sauce.

8. Remove from heat and garnish with the remaining green onions and sesame seeds, if desired.

9. Serve the spicy Szechuan beef stir-fry over steamed rice.

Special Tips or Variations:

- For a spicier kick, increase the amount of chili garlic sauce in the Szechuan sauce.

- Feel free to customize the vegetables in the stir-fry based on your preferences. Broccoli, snap peas, or mushrooms would also work well in this dish.
