3. In the same skillet, add a little more oil if needed. Sauté garlic until fragrant, then add sliced onions, carrots, and bell peppers. Cook for about 5-7 minutes until vegetables are tender-crisp.
4. Add the cooked tofu back to the skillet. Pour the prepared sauce over the tofu and vegetables. Stir well to combine and coat everything evenly. Cook for another 2-3 minutes.
5. To assemble the bibimbap, divide the cooked rice between two bowls. Top with the stir-fried tofu and vegetables.
6. In a small bowl, mix gochujang with a little water to thin it out slightly. Drizzle the gochujang sauce over the tofu and vegetables.
7. Garnish with sesame seeds and sliced green onions. Serve hot and enjoy!
