- 2 large bell peppers (any color)

- 1 cup cooked rice

- 2 tbsp olive oil

- Salt and pepper to taste

For the Ginger Soy Glaze:

- 2 tbsp soy sauce

- 1 tbsp honey

- 1-inch piece ginger, grated

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Cut the tops off the bell peppers and remove the seeds and membranes.

3. In a pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.

4. Add chopped spinach and sliced mushrooms to the pan. Cook until the vegetables are wilted and the moisture has evaporated.

10. While the peppers are baking, prepare the ginger soy glaze. In a small saucepan, combine soy sauce, honey, and grated ginger. Cook over low heat for 5-7 minutes until slightly thickened.

11. Once the bell peppers are cooked, remove them from the oven and drizzle with the ginger soy glaze.

12. Serve the stuffed bell peppers hot, drizzled with any remaining glaze.
