3. Stir in the white rice, paprika, cumin, salt, and pepper. Cook for 1-2 minutes to toast the rice and spices.
4. Pour in the beef or vegetable broth and diced tomatoes with their juices. Stir well to combine.
5. Bring the mixture to a boil, then reduce heat to low, cover the skillet, and simmer for about 15 minutes or until the rice is cooked and most of the liquid is absorbed. Stir occasionally to prevent sticking.
6. Once the rice is cooked, taste and adjust seasoning if needed. If the mixture is too dry, you can add a splash of broth or water.
7. Remove the skillet from the heat and let it sit, covered, for a few minutes.
8. Serve the beef and rice skillet hot, garnished with freshly chopped parsley.
