Instructions:

1. Preheat the oven to 325°F (160°C).

2. In a saucepan, combine the heavy cream, 1/2 cup sugar, and the scraped seeds from the vanilla bean. Heat over medium-low heat until it's hot but not boiling. Remove from heat and let it sit for 15 minutes to infuse the cream with vanilla.

3. In a separate bowl, whisk the egg yolks, 3/4 cup sugar, and salt until well combined.

4. Slowly pour the warm cream mixture into the egg mixture, whisking constantly to prevent the eggs from curdling.

5. Strain the mixture through a fine-mesh sieve to remove any lumps or bits of cooked egg.

6. Divide the mixture among 12 ramekins or custard cups placed in a deep baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins to create a water bath.

7. Bake in the preheated oven for 50-60 minutes or until the edges are set but the centers are slightly jiggly.

8. Remove the ramekins from the water bath and let them cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight to chill and set.

9. Just before serving, sprinkle a thin, even layer of granulated sugar on top of each custard. Caramelize the sugar using a kitchen torch or under the broiler until it forms a golden-brown crust.

10. Allow the sugar to harden for a few minutes before serving. Enjoy the creamy and crunchy delight of the Classic Crème Brûlée!
