2. Season the salmon fillets with salt and pepper. In a skillet, heat 1 tbsp of olive oil over medium heat. Cook the salmon fillets for about 4-5 minutes per side or until cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the remaining olive oil. Sauté the garlic and red onion until softened, about 2-3 minutes.
4. Add the cherry tomatoes and black olives to the skillet. Cook for another 2-3 minutes until the tomatoes start to soften.
5. Gently flake the cooked salmon into chunks and add it back to the skillet along with the cooked pasta. Stir gently to combine all the ingredients.
6. Season with salt and pepper to taste. Remove from heat.
7. Serve the Mediterranean salmon pasta in a bowl, topped with crumbled feta cheese and fresh parsley.
