3. In the same pan, add shredded carrots and stir-fry for 2 minutes until slightly softened. Remove and set aside.
4. If using bean sprouts, quickly blanch them in boiling water for 1 minute, drain, and season lightly with salt.
5. Add remaining vegetable oil to the pan and sauté zucchini slices for 2-3 minutes until tender but still crisp. Remove and set aside.
6. In the same pan, fry the egg sunny-side up or to your preference.
7. In a small bowl, mix gochujang, soy sauce, sesame oil, sugar, and remaining minced garlic to create a sauce.
8. To assemble, place warm cooked rice in a bowl. Arrange spinach, carrots, bean sprouts, and zucchini on top in sections. Place the fried egg in the center.
9. Drizzle the spicy gochujang sauce over the top and sprinkle with toasted sesame seeds.
10. Mix everything together thoroughly before eating.
